Pumpkins


Now that October is finally here (although you would never really believe it living in Arizona where it is still in the high 90's) . .. my thoughts are turned to what else - pumpkins! I love when stores start having pumpkin items out. I love the smell of pumpkins. I think it just reminds me of the fall and the upcoming Thanksgiving and Christmas holidays. I enjoy carving pumpkins each year (Rob usually humors me since he thinks it's kind of crazy of me). And most of all I love baking pumpkin flavored items. I can't stand pumpkin pie but other than that - I love pumpkin bread and cookies. Anyone have any good recipes they want to share with me?

Hey! I'm so excited its pumpkin season too! I love pumpkin bars and pumpkin choclate ship cookies. I think i gave you the cookie recipe, but I Will try to find the bars recipe with cream chees frosting.

I found a recipe for you:

Pumpkin Pie Cake
Mix:
1 white cake mix (set aside 1 c. dry)
2 T Flour
1 egg
1/2c melted butter
Press in the bottom of a greased cake pan.
Mix the following and then pour in the pan on top of bottom layer:
29 oz can pumpkin
1/3 c brown sugar
1c. white sugar
2 T pumpkin pie spice
1 c. evaporated milk
Mix and make a crumb topping and sprinkle on top:
1/4c sugar
1 t cinnamon
1 c. dry cake mix
¼ c butter at room temperature
Bake at 350 fro 45 minutes. Set at least 2 hours before serving.

Topping: (Mix before hand and chill. Give each serving a dollop)
1 small pkg vanilla pudding
1 c. milk
10 oz cool whip

I just made some pumpkin bread that SMELLED GREAET but it was totally raw in the middle because my oven is the wrong temperature...


1/2 C shortening (I used butter instead)
2 C sugar
4 eggs
3.5 C flour
1 (15oz) can pumpkin
1 tsp cinnamon
1/4 tsp cloves
1/2 tsp nutmeg
1/2 tsp baking powder
1/2 tsp salt
2 tsp baking soda
1 C cold water
1.5 C nuts, raisins, choco chips (opt)

cream butter & sugar, add eggs. Mis in dry ingredients. Add water & pumpkin. bake 1 hr at 350 (makes 2 large loaves)

You know, I'm not really a fan of pumpkin, but Will LOVES it, so I've acquired a small taste for it. Here are two recipes that even I, a non-pumpkin lover, really enjoy.

Pumpkin Dump Cake
1 29-ounce can pumpkin
1 12-ounce can evaporated milk
3 eggs
1 cup sugar
1 tsp. salt
3 tsp. cinnamon
1 box yellow cake mix
1 cup chopped pecans
3/4 cup melted margarine

Mix first six ingredients well. Pour batter into 9x13 greased pan. Sprinkle cake mix on top, then cover with nuts. Pour melted margarine over top. Bake 50 mins. in 350 oven. Let cool! (This is important), then top with Cool Whip.


Pumpkin Chocolate Chip Muffins
4 1/2 cups flour
1 1/2 tsp. baking soda
1 1/2 tsp. salt
4 1/2 tsp. cinnamon
3 cups sugar
1 1/2 cups oil
6 eggs
28 ounces pumpkin
12 ounce bag of chocolate chips

Mix dry ingredients. Add oil, eggs and pumpkin. Mix well, add chocolate chips. Pour into greased muffin pan (or use the papers). Bake 18 minutes in 350 degree oven. Makes a/b 3 dozen muffins (Obviously, you can cut this recipe in half for more manageable quanities. I got this from a lady w/six kids! :-)
